Dairy Free in a Modern World (and on campus)

Dairy shelf

If you’re a person who enjoys cheese and other dairy-based products, can you imagine having to give it up all together? According to, about 40 million people in the U.S. are lactose intolerant, many of whom are Asian-American, African-American, Native-American, Jewish, or Mexican-American.

Most people are not born with lactose intolerance, but they develop it later in life, thus having to give up the dairy-products they’ve previously lived with. Symptoms of lactose intolerance include stomach pain, gas, and nausea.

Expanding Estrella Hall

Expansion of Estrella Hall

Since beginning my educational journey at Estrella Mountain Community College (EMCC), I have seen the campus undergo much advancement, the most recent being the newly completed Estrella Hall North.

In the old Information Commons, I always felt that when sitting next to someone I was invading that person’s personal space and vice versa. This was something that made me hesitant to use the computers there. The new, larger space feels quieter and more comfortable to me.

Is There a Meeting Today?

Is There a Meeting Today?

How does it happen that I always arrive at an event on time, maybe even a few minutes early, and no one is there? Then I have to wait, and wait, and before you know it, my day has gone by—wasted. Punctuality in scheduling school events at Estrella Mountain Community College (EMCC) has become an issue due to the disorganization, irresponsibility, and lack of professionalism of the event organizers who leave innocent students hanging.

Peace and Quiet in a Vocal World

Peace and Quiet in a Vocal World

Did you ever have that problem of walking into the library, in anxious need of a computer in a quiet spot; however, there is only one left, and as you swoop in to snatch the seat, someone is talking on the phone loudly?

Thanks to EMCC and the finished construction of the Estrella Hall remodel, the new building has created a sanctuary for students. It is quiet and peaceful when you walk through the doors.

Searching for the Perfect Internship

Interning is hard. You have to get a resume, a cover letter and more experience so that the internship is yours. You are a nervous wreck while waiting for the response of whether or not you got the internship. If you do end up getting the internship, you do not know how you are going to get treated.  There are so many things to do to prepare, which makes it hard to know where to start.
